[Recipe] The Byron from the Byron Hamburgers cook book

As anyone who's a regular reader of this blog knows, I'm a long time fan of the burgers created by Fred Smith, Byron's Head of Food Development and hold a deep respect for the attention to detail and central philosophy that has helped him steer Byron from it's first restaurant in 2007 to the nationwide chain with more than 50 restaurants it's become today.

So when I was approached to get a sneak peek of the new Byron: The Cookbook and have a go at recreating their Byron burger (their classic bacon cheeseburger), I couldn't resist.



Bun, beef, bacon, cheese, salad, gherkins and sauce are all you need to recreate the Byron burger.



Prepped and ready to go.



Slather that bun with Byron sauce.



Beef, cheese, bacon - the dream combination.


All that hard work calls for a beer.

[Special] The Freddar Dawg Burger from Byron Hamburgers

Unless you've been under a stone for the last week or so, you can't have helped but hear about the latest special from Byron Hamburgers. The Freddar Dawg.
Simply put, it's the usual 6oz Byron hamburger, chopped in half and stuffed into a big demi-brioche hot dog bun. Topped with crispy bacon, mustard mayo, and pickles. There's melted American cheese on top and underneath there's an iceberg, Byron sauce, chopped onion 'slaw. It reminds me of the Uncle Sam, but with a greater depth of flavour. And bacon.

It's the first burger in a while that's put a smile on my face. The custom-made (more on that in a minute) American cheese is Fred Smith at his oh-so-very best, and the classic flavour combination of bacon, pickles, mustard mayonnaise and iceberg lettuce is a delight.
The cheese is actually a custom made job, combining Italian Parmesan (Grana Padano), mature cheddar, and Red Leicester (for colour), and it melts in festoons over the patties. As you can imagine, the flavours are deeply moreish and it has a pleasing stickiness on the palate, too. And so the Freddar in the Freddar Dawg is obviously a play on cheddar....
All I can say is that this burger is tried, tested, and Hamburger Me! recommended so make sure you get your chops around one in the next couple of months. Available at all Byron restaurants and priced at £10.95.

[Special] Byron 'Miami Slice' Burger

From Tuesday 29 April, Byron's special of the month will be the Miami Slice burger.

Inspired by Founder Tom Byng and Chef Fred Smith's recent tasting trip to the East Coast, the Miami Slice Burger pulls together the classic Byron 6oz patty, and a newly roadtested toasted sourdough bun, and adds super crunchy shoestring fries, melted American Cheese, a spicy paprika ketchup, and salami. It comes with a pot of pork scratchings and a tub of hot sauce on the side and it's effing moreish.

Meat Free January 2014 - The London Veggie Burger Review

Well, hello 2014.

Another year, another set of new year resolutions I'm never going to keep. Don't ask. And another January where I'm going meat and alcohol free. Needless to say the cravings have started, and I want bacon all the time, but so far I've been resolute.

In January 2013 I embarked on a month long review of the various veggie burgers available to non-meat eaters (and detox suckers) available in London - and this year I plan to continue my veggie burger research across a selection of other London burger joints.

That's a lie, I had one a couple of weeks ago. Actually, make that two in a week, a couple of weeks ago. Anyway that's not the point. The point is I don't write about Byron much, and that's because they tend to be consistently good at what they do. Their empire now extends to 34 restaurants across the country (though focusing on their homeland of London) and with Hammersmith and O2 being developed at the moment, their expansion is continuing apace.

The reason I'm writing about Byron today, is to alert you to their latest special - Le Smokey - and to make sure you don't miss out.

In a fit of drunkeness, and in no small measure doffing my cap to my colon which thinks I should eat less red meat, I made a New Year's resolution to give my body a much needed detox and spend the whole month of January meat free (and alcohol free, but that's another story).

Advance Preview: The Chilli Queen from Byron

Byron's founder, Tom Byng, knows his burger shit. 

I'll explain.

I was invited to join a preview of the upcoming 'Byron Chilli Queen', a special collaboration burger between Byron and Fred Smith - famed for his burgers at the Admiral Codrington in South Kensington, in celebration of the Queen's Jubilee this summer. 

Byron have a history of producing excellent special burgers on their menus - the Uncle Sam was so popular Byron almost added it to their menu. And Fred Smith...well Fred Smith can do no wrong in my eyes when it comes to burgers, so to say I was pretty excited about this one, would be an serious understatement...

Tom Byng, Founder of Byron, on Burgers, Business, and Innovation

Tom cuts an inconspicuous figure picking his way across his crowded restaurant at One New Change, as he makes his way to where I'm sitting. I'm meeting Tom Byng, founder of Byron, to find out a little bit more about what makes Byron, and him, tick and we've arranged to meet on a Friday lunchtime in Byron's Cheapside outpost.

I've wanted to start getting more in-depth information on the thought process and personalities who are driving London's burger restaurants, and scene, and having bumped into Tom on several other occasions, he's very kindly agreed to meet and talk about some of the things he's most passionate about. #ByronBurgerUncleSamSwarm - Byron Hamburgers, Wellington Street, Covent Garden, WC2E 7BN

This post is all about a group of hamburger junkies, a top London burger chain, and a swarm. This is the second in a series of swarms that appear to be gathering pace across London, fuelled by the fires of Twitter, and a mutual love of good company, great burgers, and quality booze.

Previously on Burger Me! you will have read about the #AdmiralCodringtonBurgerSwarm which involved a three burger tasting menu in the Ad Cod in South Kensington. The evening was great fun, and such a success that we decided to do it again (with a bit of persuasion from Anthony), but this time in conjunction with one of London's premier burger chains, Byron Hamburger. At time of writing this, Byron Hamburgers has around 17 restaurants serving burgers across London, and in fact I'd sampled their Big D burger before, on this very blog.

8/10 - Byron Burger, One New Change, Cheapside, City of London

Location: On the first floor of One New Change is little burger restaurant called Byron (no doubt overshadowed by Jamie Oliver's Barbacoa), one of chain of around 10 restaurants across London. Byron is a small, pine furnished space, spattered with mocha leather booths, but its charm comes from its huge open kitchen, from which loveliness is produced.
